Cappelli wheat is particularly adaptable, rustic and of excellent quality and is still grown in Southern Italy. Its prized semolina is suitable for pasta making and enables the production of gourmet pasta with a traditional flavour.

It contains a high percentage of protein, fibre, amino acids, vitamins and minerals. It is less refined than ordinary durum wheat and is easier to digest because of its lower gluten content.
